“Hatsu” in Japanese means first. Hatsu Sushi prides itself on serving the highest-quality fish and elevating it to an artform. The restaurant’s dishes are all carefully handmade, coveting purity in flavor and aesthetic. Hatsu Sushi represents itself the same way it presents its food: always hand-crafted. Its logo consists of a traditional hanko seal bearing the restaurant’s name in kanji, and is individually imprinted onto each of their menus. The menu itself is bound by a clean coptic stitch. In this way, the image of Hatsu Sushi speaks to same care and attention that the restaurant lends to its food.
